VX overheating light

My wifes car displays the overheating light sometimes when shes driving , but the car doesn't seem to be overheating. She can pull over, turn the car off then back on again straight away and it goes away. It uses about 4ooml of water a fortninight and seems to be running fine. Any ideas guys and girls?

it probably has an air bubble in the water when the bubble is over the sensor it reads low when the bubble moves because the water is boiling it the water covers the sensor and reads hot. not good news it will cook on you one day, one way to tell if there is a gasket on the way out is exactly this.
often the temp gauge will move up and down.
check your head gasket.
