202 red Motor dies when I put the throttle on

Hey having a pretty hard time working out what's wrong with my hq ute...
I had it sit for a while when I did some painting and rust work, it ran fine before that.
But now the revs just climb up and down when idling and if I pull the throttle on it dies?
I've put a reconditioned carby on, new head and manifolds gaskets, checked the fuel pump, checked the point gaps, it's got plenty of fuel.
Anyone had a similar issue? I'm all out of ideas on how to fix this one... I jut want to drive my old ute again :(

It sounds like

Airleak(s). The new gaskets need retightening after the 1st hot run. They shrink with heat.

2. "and if I pull the throttle on it dies?"

Weak Ignition (dying coil, wrong point gap, spark plug gap, faulty leads).

If the engine revs out fine in neutral but gags under load, the ignition is weak.

Holdenpaedia, they're the brakes Mate.

Could be rotten fuel in the tank, even though you've topped up with fresh fuel it gets contaminated by the rotten fuel and then this can gum up the rebuilt carbie. Had this happen. I'd suggest dropping the tank an doing a tank flush and blowing out your fuel lines with compressed air.
